Ingredients
- 1 bottle Grillville's Portuguese bbq sauce
- 2 chicken breasts
- 1 head leaf lettuce
- ½ green bell pepper, cut into strips
- A dozen cherry tomatoes, halved
- 2 Lebanese cucumbers, sliced into rings
- ½ red onion, cut into strips
- Corn on the cob
- 2 tablespoons olive oil
Steps
- Preheat the barbecue to 500F, taking care to leave one section of the barbecue closed, ideally the one on the side.
- In a large bowl, marinate the breasts with about half the bottle. A minimum of 20 minutes marinating time would be ideal.
- Grill the chicken breasts on both sides. Once marked, transfer the breasts to the closed section of the grill. Cook for about 15 minutes or until an internal temperature of 74C is reached.
- Remember to brush the breasts every 5 minutes or so with a layer of sauce.
- In 2 soup plates, add lettuce, tomatoes, cucumbers, red onion and corn.
- Cut the breasts and add on top of the lettuce.
- Drizzle with olive oil and remaining sauce.
Tips and tricks
This recipe could also be made with leftover chicken or pork from a previous meal. For even more flavor, add grilled chorizo!
