BBQ Chicken Pizza

Looking for an alternative to the classic pepperoni and cheese? Surprise the family with this delicious bbq chicken pizza. The secret is definitely in the sauce. An original and tasty way to combine pizza and bbq!

Ingredients

  • Grillville's Original bbq sauce - 1 bottle
  • 1 green bell pepper
  • 1 red onion
  • 250g grated mozzarella cheese
  • Approx. 150g cooked shredded chicken (equivalent to a chicken breast)
  • For the pizza dough:
  • All-purpose flour: 200g
  • Cold water: 140g
  • Salt: 4g
  • Sugar: 3g
  • Olive oil: 4g
  • Instant yeast: 2g
  • For the pizza sauce:
  • 1 whole stewed tomato cane
  • 2 garlic cloves, chopped
  • 1 tablespoon olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon sugar
  • ½ teaspoon chili powder
  • ½ cup Grillville's Original bbq sauce

Steps

  • For the pizza dough:
  • In a blender with the whisk attachment, add all ingredients.
  • Turn on the slowest setting for 1 minute, then turn up a notch for 6 minutes.
  • Remove the dough and shape into a large ball. Set aside in a large bowl with a damp cloth over the top. Let stand for about 20 minutes.
  • For the sauce:
  • Open the cane and drain slightly, then crush the tomatoes with a blender.
  • In a saucepan, add the oil and cook the garlic for about 1 minute.
  • Add the chili powder, salt and sugar and cook for a further minute.
  • Add the tomatoes and bbq sauce, mix well and cook for about 20 minutes, set aside.
  • For the pizza:
  • Preheat oven to 425F.
  • On a clean, lightly floured work surface, roll out the pizza dough.
  • Once rolled out to about 14” in diameter, transfer to a round ovenproof pizza pan.
  • Add the pizza sauce (you'll need about a third of the sauce, which you can freeze for future pizzas).
  • Top with mozzarella, vegetables and shredded chicken.
  • Bake for 10 to 12 minutes, then broil for a further minute.
  • Just before serving, drizzle pizza with bbq sauce. Serve with ground pepper or crushed chili.

Tips and tricks

When you're ready to roll out your pizza dough, add a little cornmeal to your work surface, this will give a nice crunchy crust.
