- Grillville's Portuguese bbq sauce - 1 bottle
- Chicken leg - 4 units
Steps
- Preheat the barbecue to 500F, taking care to leave one section of the barbecue closed, ideally the one on the side.
- Using a knife, make linear cuts on both the drumstick and the top of the thigh. This will allow the sauce to penetrate the meat and reduce cooking time.
- In a large bowl, marinate the thighs with about half the bottle. A minimum of 20 minutes marinating time would be ideal.
- Grill the chicken thighs on both sides. Once marked, transfer the legs to the closed section of the grill. Cook for approximately 25 minutes, or until an internal temperature of 74C is reached.
- Remember to brush the legs every 5 minutes or so with a layer of sauce.
- Brush one last time before serving.
Tips and tricks
A longer marinating time will obviously have a better effect on the meat, but the secret of a successful Portuguese chicken is to baste it with sauce several times to give it maximum flavor.
